SEAFOOD:
Extreme Catering makes every attempt to use Louisiana seafood. Having lived in Louisiana for over 35 years and growing up
on fish, shrimp, oysters, crawfish, crabs and whatever we could pull out of the water. We do believe in using authentic Louisiana
products however when not available, seafood from surrounding Gulf Coast states is used.
Our boiled seafood seasoning
comes from Prairieville, Louisiana and is outstanding. A few secret spices are added to bring out the seafood taste while
not overpower it.
During crawfish season, we visit with crawfish farmers or their wholesalers and inspect their
operations. We pay particular attention to how crawfish are caught, cleaned and stored. It may involve some added time but
the end result is very rewarding. Prior to boiling, our crawfish are washed and inspected for foreign items which may effect
the overall end product taste. Once removed, our boiling process begins and when complete, you will enjoy some of the best
crawfish ever tasted!
Our boiled shrimp and crabs come from Louisiana. They are pre-cleaned as well, with a few
little tricks applied, to ensure proper and easy peeling of shrimp and juicy crabs.
Some of the best fried seafood
ever consumed comes from Extreme Catering. We use only peanut oil when frying, filtering it constantly. Our catfish is coated
just right, fried to a nice, but not overbearing, crisp. Seasoned with another Louisiana product, with just a few added spices
and it too is OUTSTANDING!!
Try some our fried shrimp and oysters and you won’t believe it. We can’t
always obtain Louisiana shrimp, however make every attempt to do so first. If unsuccessful, a neighboring Gulf Coast state
shrimp is used. When Louisiana oysters are not available, we do not offer them on the menu in any item. Louisiana’s
salty oysters are simply the best and when consumed during a lifetime, we can taste the difference.
